Ensalada de Nochebuena / Christmas Eve Salad


Our family eats this traditional refreshing salad with fresh fruits, peanuts & pomegranates every Christmas eve with homemade tamales, beans and rice

Ensalada de Nochebuena

1 small head of Iceberg or Romaine lettuce, thinly sliced
1 med-sized pineapple, sliced or 1 (20 oz.) can sliced
pineapple, drained
3 med-sized oranges, peeled & thinly sliced
3 small bananas, peeled & sliced
2 small Red Delicious apples, cored & cut into thin wedges
1/4 pound jicama or additional red apple
1/4 cup pomegranate seeds
1/2 cup of peanuts

Dressing:
1/4 cup mayonnaise
1/4 cup crema Mexicana or sour cream
1/4 cup lime juice
2 tablespoons orange juice
2-3 canned chipotle chiles, minced
salt & pepper to taste

Non-Dairy Dressing:
¼ cp lime juice
1 tbls lime peel, grated
¼ cp sugar
¼ cp red wine vinegar
salt & pepper to taste

Save half of the pomegranate seeds and peanuts. Mix fruits, lettuce together with dressing. Serve in bowl or on plates and sprinkle extra peanuts and pomegranate seeds on top.
